My client sent me this simple recipe, and I want to share it with you. A complete, Primal meal and the kids enjoyed it! Yes, kids CAN and WILL eat veggies. Feel free to add any variety of veggies.
2 lbs ground turkey, beef, chicken, or pork
2-3 cups shredded cabbage
1 cup shredded carrots/matchstick carrots
Tamari sauce to taste (2 tbsp approx is what I used)
Sesame oil to taste
2 head of Cauliflower
4 tbsp butter
2 tbsp garlic
1/4 cup parmesan (optional)
Suggested Toppings: Avocado, green onion, siracha, kimchi, cilantro
In a food processor, add cauliflower and pulse until desired rice like size.
In a medium stainless pan, melt butter and add garlic. Once garlic is warmed through add cauliflower. Cook for 15 min or so, stirring occasionally.
Heat large skillet on medium heat and brown turkey meat. Add salt and pepper. When browned add in carrots, cabbage, tamari sauce and sesame oil. Stir occasionally until cabbage is tender (about 10 minutes.)
Add rice to bowl and top with meat mixture.
This meal fed 3 kids, 4 adults and had some leftover.
